Pictured here are: Eggplant Parmigiana covered with a tasty homemade tomato sauce, smothered with mozzarella cheese and baked to perfection; and one of my favorites, Jambota-a generous helping of potatoes cooked with hot peppers, onions, sausage and eggs.
